Rocket or young spinach | ||

Rapeseed or sunflower oil for sautéing |
For the sauce, puree the berries, honey, olive oil and balsamic with a hand blender or a stand mixer.
Season the sauce with salt and pepper.
Wash spinach or rocket and arrange it on plates.
Cut each goat cheese log into 0.4 inch thick slices (2 slices per person) and pan-fry them in a non-stick pan with a bit of oil until golden brown.
Spread sauce on the spinach or arugula and arrange two slices of goat cheese on each plate.
Garnish with pumpkin seed oil.
